I always recommend hoods with at least four speeds, ranging from about 250 to 1000 CFM, so you can dial up power for heavy smoke or keep things quiet for delicate cooking.

Here’s what to watch for:

  1. Noise trade-offs: Higher speeds extract more air but push noise from around 49 dB to 54 dB. I find the middle settings hit my favorite sweet spot.
  2. Single vs. dual blowers: Some units use one blower across all speeds, which affects how evenly they clear smoke.
  3. Ducted advantage: External venting lets you use those higher CFM ratings effectively. Ductless setups limit peak power and rely on filters instead.
